Spelt Bread for the Bread Machine

1 pkg active dry yeast
1 c warm water
2 T honey
2 T oil
1 t salt
3 1/2 c spelt flour

Run on 58 minute express cycle. Tastes great topped with a little butter and drizzle of honey!!

Directions without a bread machine:
put water and yeast in a bowl, allow a few minutes for the yeast to activate.
add honey, oil and salt (If you prefer to be sugar-free, use 1 T of stevia in place of the honey, you may need a little extra flour to make up for the liquid to dry exchange).  Mix on low about 30 seconds.
slowly add spelt flour.  Once combined, mix on medium for about 3 minutes. until combined and smooth.

Spray loaf pan or baking sheet with coconut oil spray, or grease with coconut oil.  shape as desired on baking sheet {rolls, knots, etc.) or shape and place in loaf pan.  cover with a damp cloth and let rise for approximately 30-45 minutes.  Bake in 350 oven.  approx.. 30 minutes for loaf, 10-20 minutes for rolls.  The bread will be browned and sound hollow when rapped.

    Make basic spelt bread recipe on dough setting stopping after about 5 minutes of continuous mixing, now you have a basic dough that you can make a few different things with:

    STICKY BUNS
    Roll out dough and spread with 1/4 cup soft butter, sprinkle with 1/3 cup coconut sugar, 2 tsp cinnamon, 1 tsp nutmeg, 1/2 tsp cloves and 1/2 cup chopped nuts. Roll up and slice into 1 1/2" slices.
    Put 1/4 cup melted butter and 1/4 cup coconut sugar in a 13X9 pan, mix together and place slices in pan. Let rise for approx 20 minutes. Bake at 350F for approx 30 minutes, checking for doneness.

    BAGELS
    roll into a ball {approx size of lemon, the bagel won't get much larger than the size you shape it into} and push your fingers through the center to make a hole. shape into a bagel and let rest on floured surfaced approx 10 minutes. boil bagels in water for approx 2 minutes each side. The best way to keep bagels from sticking to the baking sheet is to cover it with non-stick reynolds wrap. put bagels on covered sheet and bake at 375F for approx 25 minutes.


    FLATBREAD
    taking a small amount of dough (approx size of tangerine) press or roll into a circle about 1/4" thick. Cook in a dry skillet on medium high heat approx 1-2 minutes per side. Use as a wrap for sandwiches or tacos, or cut into wedges for dip or hummus.

    *to make frybread, prepare the same way, but cook bread in a skillet with an inch of oil.
